Ingredients

  • frozen garden peas — 600g
  • vegetable stock — 700ml
  • shallots, finely diced — 2 medium
  • double cream — 100ml
  • fresh mint leaves — 20g
  • unsalted butter — 30g
  • sea salt — 1 tsp
  • black pepper — 0.5 tsp

Method

  1. 1

Melt the butter in a large saucepan over medium heat, add the shallots, and sauté until translucent and soft, about 5 minutes.

  2. 2

Pour in the vegetable stock and bring to a gentle boil.

  3. 3

Add the frozen garden peas to the pan, return to a simmer, and cook for 3-4 minutes until the peas are bright green and tender.

  4. 4

Remove the pan from the heat and stir in the fresh mint leaves.

  5. 5

Using a stick blender, blitz the soup until completely smooth and vibrant green.

  6. 6

Stir in the double cream and season with sea salt and black pepper to taste.

  7. 7

Ladle into warm bowls and serve immediately, garnished with an extra mint leaf if desired.

Why this works

The natural sugars in the peas are perfectly balanced by the sharp, herbal notes of mint, while the addition of double cream provides a luxurious mouthfeel that rounds out the earthy flavours of the vegetable base.
