Ingredients

  • baking potatoes — 2 large
  • smoked bacon lardons — 150g
  • mature cheddar cheese, grated — 100g
  • full fat sour cream — 60g
  • spring onion, finely sliced — 2 stalks
  • sunflower oil — 1 tbsp
  • sea salt — 1 tsp

Method

    Preheat the oven to 200C/180C fan/gas mark 6.

    Prick the baking potatoes several times with a fork, rub with sunflower oil and sea salt, and place directly on the oven rack or a baking tray.

    Bake the potatoes for 60 minutes or until the skin is crispy and the centre is soft when pierced with a knife.

    While the potatoes bake, fry the bacon lardons in a pan over medium heat until golden and crispy; drain on kitchen paper.

    Once the potatoes are cooked, slice them open lengthways and fluff the inside with a fork.

    Top each potato immediately with the grated cheddar, crispy bacon, a generous dollop of sour cream, and the sliced spring onions.
