Ingredients

  • beef mince (10% fat) — 500g
  • tinned kidney beans (drained) — 400g
  • tinned chopped tomatoes — 400g
  • onion, finely chopped — 1 medium
  • garlic cloves, crushed — 3 cloves
  • tomato purée — 2 tbsp
  • beef stock — 200ml
  • chilli powder — 1.5 tbsp
  • vegetable oil — 1 tbsp
  • ground cumin — 1 tsp

Method

    Heat the vegetable oil in a large saucepan over medium heat.

    Add the onion and fry for 5 minutes until softened and translucent.

    Add the beef mince to the pan and cook until browned, breaking up any large clumps with your spoon.

    Stir in the crushed garlic, chilli powder, and ground cumin, cooking for 1 minute until fragrant.

    Mix in the tomato purée, then pour in the tinned chopped tomatoes and beef stock.

    Bring to a gentle simmer, then turn the heat to low and cover. Cook for 20 minutes.

    Stir in the drained kidney beans and cook for a further 10 minutes uncovered to thicken the sauce.

    Season to taste with salt and pepper before serving.
