  • chicken breast fillets — 4
  • brioche buns — 4
  • plain flour — 100g
  • breadcrumbs — 150g
  • egg — 1 large
  • Caesar dressing — 80ml
  • parmesan cheese, grated — 40g
  • little gem lettuce — 2 heads
  • sunflower oil — 4 tbsp

Method

    Place chicken breasts between cling film and flatten with a mallet until an even 1.5cm thickness.

    Set up three bowls: one with plain flour, one with a beaten egg, and one with breadcrumbs mixed with half the parmesan.

    Coat each chicken breast in flour, dip in egg, then press firmly into the breadcrumb mixture.

    Heat the sunflower oil in a large frying pan over medium heat. Fry the chicken for 4-5 minutes on each side until golden and cooked through.

    Toast the brioche buns until lightly golden.

    To assemble, spread Caesar dressing on the bun bases, add a layer of lettuce, place the crispy chicken on top, sprinkle with remaining parmesan, and finish with the bun lid.
