Ingredients
- dried penne pasta — 200g (dry)
- cooked turkey breast, shredded — 300g
- double cream — 100ml
- parmesan cheese, grated — 40g
- garlic cloves, minced — 3 cloves
- unsalted butter — 15g
- fresh parsley, chopped — 1 tbsp
Method
- 1
Bring a large saucepan of salted water to the boil and cook the penne pasta according to packet instructions until al dente.
- 2
While the pasta cooks, melt the butter in a frying pan over medium heat and sauté the minced garlic for 1 minute until fragrant.
- 3
Add the shredded turkey breast to the frying pan and toss to warm through.
- 4
Pour the double cream into the pan and bring to a gentle simmer, allowing it to thicken slightly for 2 minutes.
- 5
Stir in the grated parmesan cheese until melted and smooth.
- 6
Drain the pasta, reserving a splash of the starchy cooking water.
- 7
Toss the cooked pasta into the cream sauce, adding the reserved pasta water if needed to loosen the consistency.
- 8
Garnish with fresh parsley and serve immediately.
