Ingredients

  • spaghetti (dry) — 200g
  • ripe avocados — 2 large
  • garlic cloves — 2 cloves
  • extra virgin olive oil — 2 tbsp
  • lemon juice — 2 tbsp
  • parmesan cheese — 30g
  • fresh basil leaves — 1 small handful

Method

    Bring a large saucepan of salted water to the boil and cook the spaghetti according to packet instructions until al dente.

    While the pasta cooks, add the avocado flesh, garlic, olive oil, lemon juice, parmesan, and basil into a food processor or blender.

    Blitz until the sauce is completely smooth and creamy. If it is too thick, add a tablespoon of pasta water to loosen it.

    Drain the pasta, reserving 50ml of the starchy cooking water.

    Return the pasta to the warm saucepan, add the avocado sauce and a splash of the reserved pasta water, and toss over low heat until the pasta is evenly coated and glossy.

    Serve immediately, topped with an extra sprinkle of parmesan if desired.
