Ingredients

  • chicken breast, skinless — 2 large breasts
  • cranberry sauce (sweetened) — 150g
  • balsamic vinegar — 2 tbsp
  • soy sauce — 1 tbsp
  • sunflower oil — 1 tbsp
  • garlic, minced — 2 cloves
  • dried thyme — 1 tsp

Method

  1. 1

Pat the chicken breasts dry with kitchen paper and season lightly with salt and pepper.

  2. 2

Heat the sunflower oil in a large frying pan over medium-high heat.

  3. 3

Add the chicken breasts to the pan and cook for 6-7 minutes on each side until golden brown and cooked through with no pink remaining.

  4. 4

While the chicken cooks, whisk together the cranberry sauce, balsamic vinegar, soy sauce, garlic, and dried thyme in a small bowl.

  5. 5

Reduce the heat to low, pour the sauce mixture into the pan around the chicken, and simmer for 3-4 minutes, turning the chicken to coat thoroughly in the thickening glaze.

  6. 6

Remove from the heat and serve immediately, drizzling the remaining sauce from the pan over the top.

Why this works

The tartness of the cranberries balances the savoury notes of the soy sauce and balsamic, creating a complex, sticky glaze that keeps the lean chicken breast moist.
