Ingredients
- beef mince (15% fat) — 500g
- baking potatoes — 1kg
- onions — 2 medium
- carrots — 2 medium
- beef stock — 300ml
- plain flour — 2 tbsp
- sunflower oil — 2 tbsp
- butter — 50g
- milk — 100ml

Peel and chop the potatoes into chunks, boil in salted water for 20 minutes until tender.

While potatoes boil, heat oil in a frying pan and soften chopped onions and diced carrots.

Add the beef mince to the pan and brown thoroughly.

Stir in the plain flour and cook for 1 minute before pouring in the beef stock. Simmer for 15 minutes.

Drain the potatoes, add butter and milk, then mash until smooth.

Transfer the meat mixture to a casserole dish and spread the mashed potato evenly on top.

Rough up the surface with a fork and bake at 200C for 20-25 minutes until golden and bubbling.
