Ingredients
- plain flour — 125g
- semi-skimmed milk — 250ml
- large free-range egg — 1
- cooking apples — 2 medium
- caster sugar — 2 tbsp
- ground cinnamon — 1 tsp
- unsalted butter — 20g
Method
- 1
Whisk the plain flour, egg, and milk together in a bowl until you have a smooth, thin batter.
- 2
Peel, core, and dice the apples into small cubes.
- 3
Melt half the butter in the frying pan over medium heat. Add the apples, sugar, and cinnamon. Sauté for 5-7 minutes until soft and caramelised, then remove from the pan.
- 4
Wipe the pan clean and melt the remaining butter. Pour in a ladle of batter, swirling to coat the base of the pan.
- 5
Cook for 1-2 minutes until golden, flip, and cook for another minute. Repeat until all batter is used.
- 6
Spoon the spiced apple mixture into the centre of each pancake, roll them up tightly, and serve warm.

Why this works
The pairing of sweet, acidic apples with warming cinnamon creates a classic flavour profile, while the thin, tender pancake texture acts as a perfect vessel to trap the syrupy fruit juices.
