  • dark chocolate (70% cocoa solids) — 400g
  • double cream — 250ml
  • unsalted butter — 50g
  • sea salt — 0.5 tsp
  • cocoa powder — 2 tbsp

    Line the 20cm square baking tin with baking parchment.

    Finely chop the dark chocolate and place it into a medium heatproof bowl.

    Place the double cream and butter in a small saucepan and heat over medium until it just reaches a gentle simmer.

    Pour the hot cream mixture over the chopped chocolate and let it sit for two minutes.

    Gently stir the mixture starting from the centre until it is smooth, glossy, and fully combined.

    Stir in the sea salt, then pour the ganache into the prepared baking tin, smoothing the top with a spatula.
