Ingredients
- unsalted butter — 225g
- dark chocolate (70% cocoa) — 200g
- caster sugar — 300g
- large eggs — 3 eggs
- vanilla extract — 1 tbsp
- plain flour — 100g
- cocoa powder — 50g
- salt — 0.5 tsp
Method
- 1
Preheat your oven to 180°C (160°C fan) and line the baking tin with parchment paper.
- 2
Melt the butter and dark chocolate together in a large saucepan over low heat, stirring until smooth.
- 3
Remove from heat and whisk in the caster sugar until combined.
- 4
Add the eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
- 5
Sift in the plain flour, cocoa powder, and salt. Fold gently until just combined; do not overmix.
- 6
Pour the batter into the prepared tin and level the top with a spatula.
- 7
Bake for 25-30 minutes until the edges are set but the middle still has a slight wobble.
- 8
Allow the brownies to cool completely in the tin before cutting into squares.

Why this works
The combination of high-cocoa dark chocolate and cocoa powder creates a deep, intense flavour profile, while the high fat-to-flour ratio ensures a dense, fudge-like texture that balances perfectly with the slight saltiness.
