Ingredients
- plain flour — 200g
- caster sugar — 30g
- baking powder — 2 tsp
- whole milk — 250ml
- free-range egg — 1 large
- unsalted butter (melted) — 30g
- dark chocolate chips (70% cocoa) — 60g
- sunflower oil (for frying) — 1 tbsp
Method
- 1
In a large bowl, whisk together the plain flour, caster sugar, and baking powder.
- 2
In a separate jug, mix the whole milk, beaten egg, and melted butter until combined.
- 3
Pour the wet ingredients into the dry ingredients and whisk until just combined; do not overmix, as a few lumps are fine.
- 4
Gently fold in the dark chocolate chips.
- 5
Heat a non-stick frying pan over medium heat and lightly grease with a little sunflower oil.
- 6
Ladle the batter into the pan, forming small circles, and cook until bubbles appear on the surface, then flip and cook for a further minute until golden brown.
- 7
Repeat until all batter is used, keeping the finished pancakes warm on a plate.
