- tortilla chips (plain salted) — 250g
- beef mince (10% fat) — 400g
- tinned kidney beans (drained) — 400g
- tinned chopped tomatoes — 400g
- mature cheddar cheese (grated) — 200g
- onion (diced) — 1 medium
- sunflower oil — 1 tbsp
- chilli powder — 2 tsp

Heat the sunflower oil in a large frying pan over medium heat and fry the onion until softened.

Add the beef mince to the pan and brown it thoroughly, breaking up any clumps with a wooden spoon.

Stir in the chilli powder, tinned tomatoes, and kidney beans, then simmer for 10-12 minutes until the sauce has thickened.

Spread the tortilla chips out on a large baking tray.
