Ingredients

  • macaroni (dry) — 400g
  • salted butter — 50g
  • plain flour — 50g
  • whole milk — 600ml
  • mature cheddar cheese (grated) — 200g
  • parmesan cheese (grated) — 50g
  • dijon mustard — 1 tsp

Method

  1. 1

    Preheat your oven to 200C/180C fan/gas 6.

  2. 2

Boil a large pan of salted water and cook the macaroni according to package instructions until al dente, then drain.

  3. 3

In a separate medium saucepan, melt the butter over medium heat.

  4. 4

Stir in the plain flour and cook for 1 minute to form a roux.

  5. 5

Gradually whisk in the whole milk, ensuring no lumps form, and simmer until the sauce thickens.

  6. 6

Remove from heat and stir in the dijon mustard and 150g of the mature cheddar.

  7. 7

Combine the cooked pasta with the cheese sauce and pour into a large baking dish.

  8. 8

Top with the remaining cheddar and the parmesan cheese.

  9. 9

Bake for 15-20 minutes until the top is golden and bubbling.

Why this works

The combination of the roux-based béchamel and mature cheese provides a rich, stable emulsion that coats the pasta perfectly, while the baking step introduces a satisfying textural contrast between the soft pasta and the crispy, browned cheese crust.
