Ingredients

  • puff pastry (ready rolled) — 375g
  • mature cheddar cheese (grated) — 200g
  • brown onions (finely sliced) — 300g
  • unsalted butter — 20g
  • free-range egg (beaten) — 50g
  • plain flour (for dusting) — 15g

Method

    Melt the butter in a frying pan over medium heat and sauté the onions until soft and golden brown, then leave to cool completely.

    Preheat your grill or oven to 200C.

    Unroll the puff pastry and cut into four equal squares.

    Mix the cooled onions with the grated mature cheddar.

    Place a portion of the cheese and onion mixture into the centre of each pastry square.

    Brush the edges of the pastry with the beaten egg, fold the pastry over to form a triangle, and crimp the edges tightly with a fork to seal.

    Brush the tops of the pasties with the remaining egg wash.

    Place the pasties on a baking tray and bake for 20-25 minutes until the pastry is golden and puffed.
