Ingredients

  • sourdough bread, sliced — 2 slices
  • extra mature cheddar cheese — 75g
  • salted butter — 20g

Method

  1. 1

Grate the extra mature cheddar cheese coarsely to ensure even melting.

  2. 2

Spread the salted butter evenly over one side of each slice of sourdough bread.

  3. 3

Place one slice of bread, butter-side down, into a cold non-stick frying pan.

  4. 4

Pile the grated cheddar cheese onto the bread in the pan, then top with the second slice of bread, butter-side facing up.

  5. 5

Turn the heat to medium-low and cook for 3-4 minutes until the bottom is golden brown and crisp.

  6. 6

Carefully flip the toastie and cook the other side for another 3-4 minutes, pressing down lightly with a spatula to encourage the cheese to melt fully.

  7. 7

Remove from the pan once both sides are toasted and the cheese is oozing, then slice in half to serve.

Why this works

The pairing of high-quality sourdough and sharp cheddar provides a balance of tangy, fermented bread notes against the deep, savoury saltiness of the aged cheese, which is perfectly complemented by the Maillard reaction from the pan-fried butter.
