Ingredients

  • sourdough pizza dough — 400g
  • passata — 100ml
  • mozzarella ball (full fat) — 250g
  • fresh basil leaves — 10g
  • extra virgin olive oil — 15ml
  • balsamic glaze — 10ml

Method

  1. 1

Preheat your oven to its highest setting (usually 250C) with a pizza stone inside for at least 30 minutes.

  2. 2

Roll or stretch the sourdough pizza dough out on a floured surface to your desired thickness.

  3. 3

Transfer the dough to a pizza peel lightly dusted with flour.

  4. 4

Spread the passata evenly across the base, leaving a small border for the crust.

  5. 5

Tear the mozzarella into pieces and distribute evenly over the passata.

  6. 6

Slide the pizza onto the hot pizza stone and bake for 8 to 12 minutes until the crust is blistered and the cheese is bubbling.

  7. 7

Remove from the oven, immediately scatter with fresh basil leaves, drizzle with extra virgin olive oil, and finish with a swirl of balsamic glaze.

Why this works

The tanginess of the sourdough provides a complex depth that balances the mild, milky sweetness of fresh mozzarella, while the acidic balsamic glaze cuts through the rich fat of the cheese.
