Ingredients
- smoked back bacon — 4 rashers
- pork sausages — 4 sausages
- large eggs — 2 eggs
- thick-cut white bloomer bread — 4 slices
- salted butter — 20g
- sunflower oil — 1 tbsp
Method
- 1
Place the sausages in a cold frying pan and turn the heat to medium. Cook for 12-15 minutes, turning occasionally until golden brown and cooked through.
- 2
Add the bacon rashers to the same pan for the last 5-6 minutes of cooking time, frying until the fat is crispy.
- 3
Remove the meat from the pan and set aside on a warm plate.
- 4
Add the remaining sunflower oil to the hot pan and crack in the eggs. Fry for 2-3 minutes until the whites are set but the yolk is still runny.
- 5
While the eggs cook, toast the slices of bread and spread generously with salted butter.
- 6
Assemble the butties by layering the sausages, bacon, and fried eggs onto the bread. Serve immediately.
