  • cooked beetroot — 250g
  • chickpeas (tinned) — 400g
  • tahini — 30g
  • lemon juice — 15ml
  • garlic clove — 1 clove
  • extra virgin olive oil — 20ml
  • large flour tortilla wraps — 2 wraps
  • fresh rocket — 50g

Method

    Drain and rinse the chickpeas thoroughly under cold water.

    Place the cooked beetroot, chickpeas, tahini, lemon juice, garlic, and olive oil into a food processor.

    Blitz the mixture until completely smooth, scraping down the sides as necessary. Season with salt and pepper to taste.

    Lay the flour tortilla wraps on a clean surface.

    Spread a generous portion of the beetroot hummus over the centre of each wrap.

    Top the hummus with a handful of fresh rocket.
