  • beef mince (10% fat) — 500g
  • baking potatoes — 800g
  • onion, finely diced — 1 medium
  • carrots, diced — 2 medium
  • beef stock — 250ml
  • plain flour — 2 tbsp
  • tomato purée — 1 tbsp
  • butter (salted) — 50g
  • whole milk — 50ml
  • vegetable oil — 1 tbsp

Method

    Peel and chop the potatoes into chunks, boil in salted water until tender, then drain and mash with butter and milk.

    Preheat the oven to 200C/180C fan.

    Heat oil in the frying pan and fry the onion and carrots until soft.

    Add the beef mince and cook until browned, stirring to break up any clumps.

    Stir in the flour and cook for one minute, then gradually add the beef stock and tomato purée, simmering until thickened.

    Transfer the beef mixture to the oven-proof dish and spread the mashed potato evenly over the top.
