Ingredients
- Halloumi cheese — 225g
- Brioche burger buns — 2
- BBQ sauce — 50ml
- Rocket — 30g
- Beef tomato, sliced — 1 medium
- Sunflower oil — 1 tbsp
Method

Slice the halloumi into 1cm thick rectangles.

Heat the sunflower oil in a griddle pan over a medium-high heat.

Place the halloumi slices in the pan and grill for 2-3 minutes on each side until charred and golden.

While the halloumi is grilling, lightly toast the cut sides of the brioche buns in the pan or a toaster.

Spread a generous amount of BBQ sauce on the base of each bun.

Layer the rocket, tomato slices, and grilled halloumi onto the buns.

Drizzle with a little extra BBQ sauce if desired and close the burgers to serve.
