Ingredients
- pork loin chops, bone-in — 2 chops
- BBQ sauce — 4 tbsp
- sunflower oil — 1 tbsp
- smoked paprika — 1 tsp
- sea salt — 0.5 tsp
- black pepper — 0.5 tsp
Method
- 1
Pat the pork chops dry with kitchen paper and season both sides with salt, pepper, and smoked paprika.
- 2
Heat the sunflower oil in a frying pan over medium-high heat until shimmering.
- 3
Place the pork chops in the pan and sear for 4-5 minutes on the first side without moving them, until a deep golden crust forms.
- 4
Flip the chops and cook for another 3 minutes.
- 5
Brush the cooked sides of the chops generously with the BBQ sauce, flip them over to caramelise the sauce for 30 seconds, then brush the other side and flip again for a final 30 seconds.
- 6
Remove from the pan and allow the meat to rest for 3 minutes before serving.

Why this works
The high-heat sear locks in the natural juices of the pork, while the sugar content in the BBQ sauce caramelises rapidly to create a sticky, flavour-packed crust that balances the richness of the meat.
