Ingredients

  • smoked streaky bacon — 6 rashers
  • plain flour — 200g
  • whole milk — 250ml
  • large egg — 1
  • baking powder — 2 tsp
  • caster sugar — 1 tbsp
  • maple syrup — 4 tbsp
  • unsalted butter — 20g

Method

  1. 1

Place the bacon rashers in a cold frying pan and turn the heat to medium. Fry until golden and crispy, then remove and set aside on kitchen paper.

  2. 2

In a mixing bowl, whisk together the flour, baking powder, and caster sugar.

  3. 3

Make a well in the centre, add the egg and whole milk, and whisk until smooth.

  4. 4

Melt a small knob of butter in the same frying pan used for the bacon.

  5. 5

Pour small ladles of batter into the pan, cooking for 2 minutes per side until bubbles appear and the edges set.

  6. 6

Stack the pancakes on plates, top with the crispy bacon, and drizzle generously with maple syrup.

Why this works

The combination of salty, rendered fat from the bacon and the deep, woody sweetness of maple syrup provides a sophisticated balance of flavours that makes the pancakes less cloying and more savoury.
