- ready-rolled puff pastry — 375g
- asparagus spears — 250g
- soft goat cheese — 150g
- crème fraîche (full fat) — 100g
- egg (beaten) — 1 large
- fresh thyme leaves — 1 tbsp
- olive oil — 1 tbsp

Preheat your oven to 200°C (180°C fan/gas mark 6).

Unroll the puff pastry onto a baking sheet lined with parchment paper.

Score a 2cm border around the edge of the pastry with a sharp knife, being careful not to cut all the way through.

Prick the inner rectangle multiple times with a fork to prevent it from rising too much.

Brush the edges of the pastry with the beaten egg.

In a small bowl, mix the crème fraîche with half the thyme and spread it over the inner rectangle.

Trim the woody ends of the asparagus and arrange the spears neatly on top of the crème fraîche.

Crumble the goat cheese over the asparagus and drizzle with the olive oil.

Bake for 20-25 minutes until the pastry is puffed and golden brown and the asparagus is tender.

Garnish with the remaining fresh thyme leaves before serving.
